Pistachio Tiramisu
A classic dessert with a twist
Serve up a slice of Italy from your kitchen with Joy's Classic Tiramisu recipe that features hot chocolate-dipped ladyfingers covered with airy mascarpone cream and a generous pistachio spread to deliver intense pistachio flavour. This dessert is light, thanks to the whipped mascarpone layers and the delicate sponge of the biscuits.
Ingredients

28 ladyfinger biscuits

125g granulated sugar

750g double cream

160g mascarpone

1 cup of hot chocolate

1 teaspoon vanilla extract

2 generous layers of pistachio spread to taste

cocoa powder
Step by step instructions and tips​

Use an electric mixer to whisk the mascarpone and double cream while slowly adding half the sugar and the vanilla extract. You can stop whisking once stiff peaks have formed, then set aside.

Dip each side of the ladyfinger into the hot chocolate, making sure to work quickly. Then, place the ladyfingers into a single layer in a baking dish.

Pour about half the mascarpone mixture on top of the ladyfingers, smoothing the cream into an even layer. Then, add a layer of pistachio spread.

Place another layer of dipped ladyfingers on top of the mascarpone layer. Finish off with the remaining mascarpone, add another layer of pistachio spread and use a spatula to smooth it out.

Before serving, generously dust the tiramisu with cocoa powder
